These are some of the questions we often get asked, we hope they help but if you have any other burning questions we would love to hear from you!

Unshucked: Up to 14 days if stored correctly.
Shucked: In your fridge below 4 deg C they are fine for 7 days

Unshucked: Keep below 15 deg C. In an esky in a container ABOVE the ice is perfect (not in direct contact or they will die)
Shucked: In your fridge below 4 deg C (or in your belly 🙂 )

Sydney Rock Oysters are very versatile in terms of how they’re served. If you prefer them raw, the classic twist of lemon or eschalot vinegar works perfectly. Or if you’re keen on a cooked oyster, the fatty richness of the bacon in a Kilpatrick is a delicious compliment to the briny complexity of the oyster.

Most of our oysters will be harvested and depurated (a non chemical process to purge them in their natural water). From the time of coming out of the depuration tank they will be delivered to you generally within 24hrs for unshucked oysters. During the warmer months we will harvest from waterways that are so clean they are not required to be depurated!
